Whipped Brown Sugar Cookies:

1 cup butter, softened
1 cup greek yogurt
1 1/2 cups light brown sugar, packed
2 eggs
1 tsp vanilla extract
2 1/2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt

Preheat oven to 350 F. Using an electric mixer on high, beat all wet ingredients and sugar together in a large bowl for 3 minutes. Mix dry ingredients together in a medium bowl. Slowly add dry ingredients to wet ingredients, beating continuously, until combined and batter looks like a mousse (it will be very light and wet).

Spoon heaping teaspoons onto a cookie sheet about 1.5 inches apart. Bake for 8-10 minutes or until cookies look like they’re “sweating” (mostly baked with tiny droplets of moisture).

Makes about 30-35 cookies.

Chai Spice Cookies:

1 cup butter, softened
1 egg
1 tsp vanilla extract
2 1/2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 3/4 cups sugar
2 1/2 tsp ground cinnamon
1 tsp ground ginger
1 tsp ground cardamom
1 tsp ground allspice
1/4 tsp finely ground black pepper

You might want to wear at least a face mask when handling the spices: they will cloud and get in your eyes and nose while you’re sifting if you’re not careful, and that’s not fun!!!

Preheat oven to 350 F. Combine wet ingredients in a large bowl and set aside. Combine flour, baking soda, baking powder, and salt in a medium bowl and set aside. Combine sugar, cinnamon, ginger, cardamom, allspice, and pepper in a small bowl, then sift them to ensure even consistency. Set 1/4 cup of the spice and sugar mixture aside for later.

Beat the wet ingredients until combined. Pour the sugar and spice mixture in with the wet ingredients (except for the 1/4 cup that you set aside) and beat until combined. Slowly add the rest of the dry ingredients until combined. The dough will appear very dry and crumbly.

Use your hands to make 1-inch balls of dough and roll them in the remaining sugar and spice mixture. Bake 11 minutes or until they’ve flattened into discs.

Makes about 30-35 cookies.

Double Chocolate Macadamia Cookies:

1 cup butter, softened
1 1/2 cups sugar
2 eggs
2 tsp vanilla extract
2 cups all-purpose flour
2/3 cup cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon salt
2 cups semisweet chocolate chips
1/2 cup chopped macadamia nuts

Preheat oven to 350 F. Combine wet ingredients and sugar in a large bowl and beat until combined. Mix all dry ingredients in a medium bowl. Slowly add dry ingredients to wet ingredients, beating at low speed until combined. The batter will be very, very thick.
Drop cookies by heaping teaspoons onto a cookie sheet about 1.5 inches apart. Press them down with your thumb. Bake 9 minutes. Makes about 45-50 (small) cookies.
